
For a birthday I attempted to make cake!
Since I am amateur level I chose to go for an easy recipe that did not require too many fancy tricks just in case I mess up as time was ticking!
So the day's selection was
Victoria Sponge Sandwich.

Ingredients: (LOTS OF) Strawberries Caster Sugar Baking Powder Self Raising flour Unsalted butter Whipping Cream Fat Free Fromage Frais Eggs Maryland cookies (which turned out uneccessary) |

First beat the eggs into a big mixing bowl, then measure the flour and baking powder. The amount of sugar should roughly equal to the butter, for best result! The butter must be rested and soft. If in a rush, microwave to 10-15 seconds! We do not want melted butter! |

Add the mix into the mixing bowl and whisk.
(Tip: Before whisking, slightly press the butter into the four. This will avoid the flour flying everywhere when you start to whisk! (Speaking from personal experience lol) |

Make sure to cut out two pieces of baking paper and put at the base of the baking tray (or the cake will be stuck), spread the sides with a little oil or butter. Spread the mix evenly into two trays. This will be the sandwich :) |

After 25 minutes in the oven, TADA! So glad it turned out perfect and did not sink! |

After cooling for about 30 minutes, flip the tray around and place the sandwich onto a plate. Using a cake knife, scrape off the top bit and the rough edges. The smooth surface will help the filling sit properly :) |

The mixture in the bowl is the fromange frais mixed with freshly diced strawberries. A few drop of yoghurt syrup was added to add some sweetness into the yoghurt. This is an alternative way to whip cream, which can be quite fattening. But you are of course free to use whatever suits your taste bud :) |

Place the other sandwich on top. and there you have it :) |

Lacking creativity I only added a layer of whipping cream and placed freshly sliced strawberries on top!
I had fun baking :) But probably won't do it again any time soon loool.

Good idea that using yogurt as filings! I will try that on next time!
Its a healthier option but it is not as thick as cream and if you're not quick enough it will melt! :)
